Why buffet costing is different
In à la carte service each plate is costed and sold separately. In a buffet, guests take as much as they like from many dishes, and you prepare food in batches before you know exactly how many people will come. That makes cost per cover, the food cost for one guest, the key number for pricing a breakfast, lunch or dinner buffet.
Buffet price = Cost per cover ÷ Target food cost %
How to fill in the inputs
- Batch cost: ingredient cost of one batch of the dish, from your recipe card.
- Covers per batch: how many guests that batch normally feeds on the buffet line. Track it for a few services, because guests take more of popular dishes like paneer and biryani.
- Live counters: chaat, dosa, pasta or tandoor counters have a fixed setup and chef cost per event, so their cost per cover falls as more guests come.
- Wastage allowance: food left in chafing dishes at closing. Many buffets plan 8% to 15%.
- Other costs: cooking gas, disposables and napkins per guest.
Pricing and controls
Buffets usually run a higher food cost percentage than à la carte menus, often 30% to 40%, because guests choose their own portions. The second result table shows how your cost per cover changes when fewer guests turn up than expected, which is when buffets lose money.
- Refill in smaller batches towards the end of service.
- Place lower-cost items such as salads, breads and rice first on the line.
- Use smaller serving spoons for expensive dishes.
- Record leftovers daily and adjust next day's production.
